Sobacha is a refined roasted buckwheat tea celebrated for its warm, nutty character and natural caffeine-free profile. Sourced from dattan soba (韃靼蕎麦) cultivated in the pristine fields of Shibetsu, Hokkaido, this Sobacha is remarkably rich in rutin, a rare antioxidant flavonoid found here at concentrations up to 100 times greater than in common buckwheat.
Elegant and versatile, it offers a smooth roasted flavor that can be savored at any time of the day. The roasted grains themselves may also be enjoyed as a delicate topping, adding depth and crunch to salads and other dishes.
How to use
1. Whisk the Powder
Sift 2 tsp of hojicha powder into a bowl. Add 60 ml of hot water (75°C) not too hot - and whisk until smooth and slightly frothy.
If you are feeling wild, our favourite ratio is 2,5g of Matcha or Hojicha for 28g of water for a more thick and creamy paste, intense flavor
2. Steam Your Milk
Heat 2/3 cup of your favorite milk until creamy with microfoam.
3. Pour & Enjoy
Slowly pour the steamed milk over the whisked hojicha. Sweeten to taste if you want!
